Simply put, net carbs refer to the available, or usable, carbs in a food. Even though fiber (and certain other carbohydrates, such as some sugar alcohols) is classified as a carb, it is not digested, and therefore, it does not increase either blood sugar or insulin levels. Along these lines, fiber and other non-usable carbs are subtracted from the total carbohydrate content to yield the “net carb” count.
